Ooh, you are in for a treat if you have never used white wheat before! This high protein wheat berry grinds into a light colored whole wheat flour that rises higher and is lighter and tastier than the traditional "turkey red" wheat. Because it is lighter, I have been able to use whole wheat flour for hamburger buns, pizza crust, cinnamon rolls and noodles. Your bread will bake to a delicious golden brown color. Your family will ask if you are baking with white flour again!
Perfect for long-term storage, our white wheat has been packed in an oxygen-removed sturdy bucket, 45 lbs. of it. Will last in storage for 30+ years, so you'll never go hungry. I am baking bread from my storage wheat that is quite old, and the wheat is still fresh and makes fabulous bread!
The protein content is a high 12-16%. Wheat kernels last wonderfully well, but once ground, the nutritious oils in whole wheat are quickly oxidized by air, so store whatever flour you don't use immediately in an air-tight container in the freezer.
We use a Bucket Opener to easily remove the lid each time we use it.
